In my childhood, I was not aware of this vegetable Ivy gourd/ kovakkai. We started making kovakkai only after knowing that it is very much good for diabetes.
Here I have made ivy gourd as a simple stir fry and I have also sprinkled coconut scrapings which is very common in down south.
Lets see how to make it.
Ingredients:
Ivy gourd..250g
1 finely chopped onion
3 green chillies
Coconut scrapings...1/4 cup
Salt as required.
Spices:
1 teaspoon red chilli powder
For seasoning:
2 tablespoon coconut oil
1 tablespoon mustard seed
1 strand curry leaf
Pre-preparation for Ivy gourd stir fry:
- Wash the Ivy gourd in water
- Chopp the Ivy gourd into slices
- Finely chop the onions and the green chillies.
- Heat oil in a pan and add mustard seeds. It splutters.
- Then put the curry leaves, finely chopped onions and green chillies and saute it.
- When the onions are half cooked, add the sliced ivy gourds and saute it.
- Keep the flame in medium and saute it.
- Add red chilli powder, salt and stir it until the raw smell disappears.
- When it is cooked, sprinkle the grated coconut and stir for 1 min.
- The fry is done
Benefits of Ivy gourd:
- It has anti inflammatory and anti oxidant effect.
- The beta carotene in ivy gaurd has anti oxidant effect.
- It is rich in fibre, vitamin B
- Researches have shown evidence that ivy gourd reduces the blood glucose level which raises after meal
- Studies have ahown that it may prevent liver toxity
How to enhance the taste of the poriyal?
- Here I have added only chilli powder.But also we can add other masala powder like corriander powder, garam masala powder to enhance the taste of the fry.
- Sambhar powder alone can also be added. It gives a little different taste.
- You can skip coconut scrapings as it reduces the spicyness. But coconut is very very good for health.
