Brinjal curry/simple and easy cooking






Ingredients:
For 2 members
Brinjal: 2 (chopped into cubes)
Tomato: 1
Onion: 1 finely chopped
Green chillies: 2 sliced
Garlic: 2 cloves
Gingely oil or coconut oil: 4 tbsp
Tamarind juice: extracted from 4 seeded tamarind

Seasoning items:
Mustard: ½ tsp
Fenugreek: ½ tsp
Cumin seeds: ½ tsp
Curry leaves: a small amount

Spice powder:
Red Chilli powder: 1 ½ tablespoon
Coriander powder: 1 tablespoon
Turmeric powder: ½ tablespoon

To grind:
½ shell Coconut and 1tsp cumin seeds.
I make curry in cooker as it is easy and takes less time (hardly 10 min)


Steps with picture:


Step 1: In a mixie jar add   coconut and cumin seeds and grind it into fine 
paste.



Step 2: Heat 4 tbsp oil in cooker and add all the seasoning ingredients.

Step 3: Add onion, chilli, garlic into the cooker and saute it unti onion turns transparent.

Step 4: Add tomato and sauté it.



Step 5: add brinjal and sauté for 3min.



Step 6: Add all spice powders




Step 7: Add tamarind juice and boil.

Step 8: Add coconut paste into the cooker and add required amount of water. The mixer should be neither thick nor watery.
Step 9:Add salt and close the lid and cook for 1 whistle.
Step 10: After the pressure is released open the lid. Brinjal curry is ready.

Step 11: Serve Hot for rice.
