Beetroot is a regular vegetable
in my vegetable basket. I often drink beetroot carrot juice which has many
nutritious benefits. Also I make this beetroot poriyal once in a week. I have
plans to try different dishes with beetroot. Now I have come with a simple and
basic version of beetroot poriyal which is common in south Indian kitchen. Let’s
see how to make it.

1 cup of shredded beetroot
·
Few coconut scraping
·
1 teaspoon cumin seeds
·
1 green chilli
·
Salt to taste
For seasoning:
·
1 sprig curry leaf
·
1 teaspoon mustard seed
·
Gingley oil/coconut oil
How to prepare
beetroot poriyal?
3. Sprinkle some
water and close the lid and cook
This is a fair side dish for
sambhar and other curry varieties.

Here I have grated the beetroot in a grater. But
it can also be cut into small pieces. But I like the shredded type.

Instead of adding the coconut mixture, we can use
finely chopped onions and chillies and sauté it before adding the beetroots and
skip adding the coconut at the end if you are not a regular user of coconut.

Beetroot is rich in folate, manganese, potassium,
Iron and vitamin C.

Betanin is the pigment in beetroot that gives it a
pinkish red colour. This betanin has various health benefits.
How does this
beetroot poriyal help us?

Studies suggest that nitrates in beetroot increase
the stamina and improve our physical performance.
·
Also betanin in beetroot reduces fatty deposits in
liver and protects the liver from toxins. So it is an excellent blood purifier.
·
Nitrates in beetroot widen and relaxes the blood
vessels and reduces blood pressure.
So it’s good to add beetroot in
our diet once in a week.
