White coconut chutney. A simple and easy sauce for dosa, idli, pongal, vada, somas, bajji, etc. Now a days people are using ready- made sauce varieties as side dish for samosa, vada, bajji and other snacks items. It’s neither tasty nor healthy. It’s dangerous too due to the preserving ingredients added in the sauce.
But these homemade chutneys are healthy and tasty. It’s also easy to prepare. We only need very few basic ingredients to prepare this chutney. So, put down the western sauce culture and turn to these chutney recipes.
There are a variety of chutney recipes and I would like to share one by one.
Since only green chilli is added for spiciness, the color of the chutney is almost white. So we call it is white coconut chutney. But if we add red chilli, the chutney has light red tint and it’s called red coconut chutney.
Ingredients: (2 nos)
· Half of half shell coconut (cut into pieces)
· 3 or 4 green chillies
· 1 sprig curry leaf
· 2 tablespoon raosted full chana dal
· 1 small piece ginger
· 1 clove garlic.
· Salt as required.
For seasoning:
· 1 teaspoon mustard seeds
· 2 red chillis
· 1 sprig curry leaf
· 2 tablespoon cooking oil
How to make white coconut chutney?
1. Put all the ingredients in a mixer jar and grind it into a paste.
2. Add little water and transfer the ground paste into a bowl.
3. In a small seasoning pan, add 2 tablespoon cooking oil, 1 teaspoon of mustard seeds, 2 red chillis, 1 sprig curry leaf.
4. When the mustard seeds have splutterd, add the seasoned ingredients to the ground paste.
5. White coconut chutney is ready.
Coconut chutney is an excellent side dish for almost all south Indian breakfast. To be frank in core south Indian village, we use to have coconut chutney as side dish even for chappathi. But now thanks to social media that everybody aware of sabzis.
Tips for making coconut chutney:
Ø While making coconut chutney, don’t add too much of garlic cloves as the smell and taste may dominate the entire chutney.
Ø Also add only a small piece of ginger or else the raw smell of ginger may dominate.
Ø We cannot store this in fridge as coconut may ferment.
Ø We can also add roasted split gram (porikadalai) instead of roasted full gram.
