Broccoli matar sabzi


Broccoli is a vegetable which is rarely used in Indian cuisine. To be frank I hadn’t seen broccoli during my school and college days. Later I read in a food magazine that broccoli is same as cauliflower and has more nutrition benefits. So I wanted to try a recipe with broccoli.
I got in a local vegetable market near my house. Initially its appearance didn’t attract me well. But still I wanted to give a try keeping in mind its nutrition benefits. It was winter season and my vegetable basket was flooded with green matar. So I got an idea to make broccoli matar sabzi. It came out well and it tasted well with roti/chappathi. Let’s see how to make it.
                Cabbage stirfry
Ingredients:


  • 1 finely chopped onion
  • 1 cup broccoli florets
  • ½ cup green peas
  • Salt to taste
Seasoning ingredients:

  • 2 tblspn gingely/coconut oil
  • 1 tspn cumin seeds
  • 1 sprig curry leaves
Spice powders:  

  • 1 tablespoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala powder
  • ½ teaspoon turmeric powder.
How to make broccoli green matar sabzi?
1.    Heat oil in a pan and add cumin seeds and curry leaves
2.   Then add onion and sauté it well
3.   When onion becomes transparent, add green matar and stir it
4.   Sprinkle some water and close the lid and cook
5.   When green peas is half cooked, add the broccoli florets.
6.   When broccoli is half cooked, add the spice powders and sauté it well











7.   Cook until the raw smell of the spice powder disappears

8.   Broccoli matar sabzi is ready
What are the variations that can be made to makeup the sabzi?
I made this broccoli matar sabzi in fat –ah-fat manner, keeping in mind the time consumption also so that I can present this sabzi in an easier way for working women. But happy home makers may get enough time and here I have given some alterations to enhance its texture and taste.

  • After sauting onion we can add ginger garlic paste which gives nice aroma and tatse.
  • The sabzi which I have made has some dry texture. Inorder to give a moist texture and for a better tatse we can add tomato puree or finely chopped tomatoes after adding the ginger garlic paste.
  • Instead of green peas, chopped potatoes can be added or along with broccoli, potatoes and green peas can be added and cooked.
How to prepare the broccoli for cooking?
Heat 4 cups of water in vessel and add the broccoli in water. If there is any worm hidden in the florets, it comes out. Drain the water and rinse it well. Now the broccoli is ready to make sabzi.

Consuming variety of fruits and vegetables protects us from various life style related health conditions. To know about the health benefits of broccoli, I surfed through the internet and found that,

  • Broccoli is rich in Vitamin A,C, E and K.
  • It is rich in iron, zinc and polyphenol anti-oxidants
  • It is also rich in calcium. So no doubt, it is very beneficial for bones.
  • It is rich in dietary fibre. So it helps to prevent constipation.
  • It is rich in folate which is a mineral that helps to promote tissue growth. So, pregnant women and those who are trying to conceive must include broccoli in their diet. It prevents anemia and birth defect
