Potato fry/Aloo stir fry


Potato fry: Almost everybody is a fan of potato fry. Potato is a vegetable that can also be used in combination with other vegetables. Adding potatoes to any dish enhances the taste of the dish.
Here in this method I have used very little oil for frying potato. So this is a healthy method too. There are other methods also to prepare potato fry which also consumes less oil, but this is a simple and easier way of making potato fry. I would share other methods in future posts.
This potato fry can be paired with curd rice, sambhar rice dhal rice and anything else.
Let’s see how to make it.
                Beetrootporiyal
Ingredients:
·        2 potatoes chopped into cubes
·        2 red chillies
·        1 teaspoon urad dhal
·        1 teaspoon mustard seed
·        1 sprig curry leaves
·        3 tablespoon gingely oil/ coconut oil/ ground nut oil
Spice powders:
·        2 tablespoon chilli powder
·        2 tablespoon coriander powder
·        1 teaspoon turmeric powder
·        1 teaspoon hinge powder
How to prepare this potato stir fry?
1.    Heat oil in a pan and add all seasoning ingredients like mustard seeds, red chillies, urad dhal and curry leaves
2.   When mustard seeds have spluttered, add chopped potatoes and stir it.
3.   You can also close the lid and cook
4.   Intermittently stir it
5.   If necessary sprinkle some water and stir so that it doesn’t get burnt.
6.   When the potato is almost cooked, add the spice powders like chilli powder, coriander powder, turmeric powder, hinge powder and also sprinkle some salt.
7.   Stir it well and cook until the raw smell of the spices disappears.
8.   Now the potato fry is ready.
I pair it with sambhar, veg biriyani, dhal rice, curd rice and any rice. I also eat it solely. I can never stop eating this fry until it is finished.
Pre-preparation for making potato fry:
·        Peel the skin of the potato and chop it into equal cubes
·        Put these potato cubes in a bowl of water until you start cooking
·        When the chopped cubes are immersed in water, the excess starch in the potato is removed.
·        Also the potato cubes remain fresh when immersed in water otherwise it may turn black.
Nutrition in potato:
·        Potato contains maximum carbohydrate and moderate amount of protein and fibre.
·        It also has a considerable amount of potassium, Vitamin C, B6 and folate.
How does this potato help us?
Potatoes are very filling. So they give us a feeling of fullness and reduce the intake of food. Hence it is very helpful for weight manage ment.
