Quick and healthy rasam


My husband is a non-veg lover and he was making mutton chukka one Sunday. So for rice I made this simple and quick rasam. It is very simple yet very healthy and aids in digestion of our heavy meals. Here I haven’t added tamarind juice as in previous one.
This is a simple version of rasam that anybody can make. We can make it fat-ah-fat.
Vegetarians can pair it with potato fry. I am a great lover of this instant rasam and potato fry. Whenever I feel lazy, I make this quick rasam which is very mouth watering. The spices that we include in rasam release nice aroma while cooking and after cooking and this stimulates our hunger. Let’s see how to make it.

                Sambhar recipe
Ingredients:
·        2 tomatoes
·        A small piece of ginger
·        5 garlic cloves
·        10 to 15 pepper
·        1 tspn cumin seeds
·        Coriander leaves
For seasoning:
2 tablespoon gingely oil/coconut oil
·        Mustard seeds- 1 teaspoon
·        Curry leaves-1 sprig
·        2 red chillies
·        Asafoetida powder
Spice powders
·        1 tablespoon chilli powder
·        1 tablespoon coriander powder
·        2 tablespoon rasam powder
·        ½ teaspoon turmeric powder
How to make this instant rasam?
1.    Chop the tomatoes and add it to a blender and pulse it two times. We’ll get tomato puree. To this add 200ml of water and smash it well
2.   Put all the spices ginger, garlic, pepper and cumin seeds in a motor and pestle and crush it well.
3.   Now to the tomato puree, add the crushed spices.
4.   Add the spice powders and little chopped coriander leaves. Mix it and place it on the stove and switch on the flame. Bring it to boil. Once it starts boiling switch off the flame.
5.   In a separate pan heat 2 tablespoon of oil and add all the seasoning ingredients mustard seeds, red chillies, curry leaves and a pinch of asafetida powder.
6.   After the mustard seeds have spluttered, add the seasoned  ingredients to the rasam.
7.   Spicy and healthy rasam is ready.
What are the variations you can do to enhance the taste of this rasam?
·        If you want your rasam to be sourer, you can add tamarind juice which enhances the sour taste.
·        Some people add a small pinch of jaggery to enhance the flavor but I don’t have the habit of adding jaggery to any of my spicy dishes.
Health benefits of this quick rasam.
·        The spices in rasam are an excellent remedy for common cold and cough. Pepper soothes the throat by pulling down the mucus in throat.
·        Also it can be taken as a soup separately and it helps in digestion of heavy meals.
