Amaranth side dish/Red spinach


Amaranth leaves side dish/remedy for hemorrhoids


This is a very humble and simple dish. But it is rich in medicinal values. These leaves are more superior than other greens as it is a powerhouse of vitamins and minerals. This dish is very stomach friendly and good for your small intestine and large intestine. It is an excellent medicine for piles and hemorrhage.Try to include this dish along with roti or rice atleast once in two weeks.

Ingredients:



Amaranth leaves /red Spinach: 1 Bunch
Onion: 1 finely chopped
Green chillies: 2 nos/finely chopped
Cumin seeds: 1 tablespoon
Urad dhal: ½ table spoon
Coconut oil or gingely oil: 2 tablespoon

Procedure:
  1.  Remove the lower part of the stem which is very thick and Wash the leaves and upper portion of the stem in tap water
  2.  Heat oil in a pan
  3. Add the seasoning ingredients like cumin seeds and urad dhal
  4. Add finely chopped onion and green chillies and Saute it for 2 minutes
  5. Now add the washed red leaves on to the pan and saute it for 2min
  6. Sprinkle some salt as per your requirement(minimum is good) and close the lid(if the lid is half closed, the colour of the leaves can be retained) and cook for 10 to 15 min
  7. Now the colourfull and tasty  and healthy side dish is ready.

Step1:  Remove the the thick lower part and chop the leaves and stem

Step2: Wash it in tap water and strain the water in it and keep it aside

Step3: Heat oil in a pan

Step4: Add all the seasoning ingredients and season it

Step5: Add the chopped onion and green chillies and sauté for 2min

Step6: Add the amaranth leaves and saute it.

Step7: Sprinkle little salt and stir it and close the lid and cook for 10 to 15 min


Step8:The dish is ready



Benefits:
·  Having  this side dish along with curd rice is an excellent medicine for piles and hemorrhage.  Eat curd rice and this red leaf side dish three times morning, afternoon and night and do not  take any other spicy food. The very next day you will be alright for sure.
·        Its rich in iron and hence it cures anemia
·        Rich in vitamins A, B, K
